Every Tuesday, we receive a delivery of organic pork from Poul at HindsholmGrisen. We butcher the pig in-house and process the meat to produce charcuterie. This hands-on, detail-oriented work with the raw ingredients gives us valuable insights into flavor and development, allowing us to continuously improve both the process and the final product.
